  1. In a saucepan over medium-high heat, soften the onion in 15 mL (1 tablespoon) oil. Add 280 g (2 cups) squash and continue cooking for 2 to 3 minutes. Add broth and bring to a boil. Salt and pepper. Cover and simmer 10 minutes or until squash is tender.
  2. In blender, reduce squash to smooth purée. Book.
  3. In a saucepan of boiling salted water, cook pasta al dente. Store 250 ml (1 cup) of cooking water. Drain and reserve.
  4. In a large skillet over medium-high heat, brown remaining squash in remaining oil (30 ml / 2 tablespoons) until tender, about 10 minutes. Add the garlic and the cherry tomatoes. Continue cooking for 3 minutes. Salt and pepper.
  5. Stir in squash purée, arugula, pasta, cheddar and sambal oelek. Add cooking water as needed. Adjust seasoning. Sprinkle with almonds when serving.
